Chicken and Vegetable Stir Fry

Stir-fries are an excellent option for a quick and healthy dinner. Use brown rice instead of white rice and add some colorful veggies like bell peppers and broccoli for extra vitamins and fiber.

Ingredients (Serves 1-2 pax):

  • 2 chicken breasts, sliced into bite-sized pieces
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon canola oil

Directions:

  1. In a small bowl, mix the soy sauce and cornstarch together.
  2. Heat the canola oil in a wok or large skillet over high heat.
  3. Add the chicken and stir-fry for 3-5 minutes or until cooked through.
  4. Add the onion, bell peppers, and broccoli and stir-fry for another 3-5 minutes or until the vegetables are tender.
  5. Pour the soy sauce mixture over the stir-fry and stir until the sauce thickens.
  6. Serve hot.
