Tofu is a good source of plant-based protein, which is important for maintaining muscle mass and strength in older adults. It is low in saturated fat and cholesterol, which can help improve heart health and reduce the risk of heart disease. Tofu is high in fiber, which can help improve digestive health and reduce the risk of constipation.

Ingredients (Serves 1 pax):

  • 1 block firm tofu, cubed
  • 1 small onion, sliced
  • 1 small carrot, peeled and sliced
  • 1 small potato, peeled and cubed
  • 2 cups low-sodium chicken broth
  • 1 tablespoon canola oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro

Directions:

  1. Heat the canola oil in a large pot over medium heat.
  2. Add the onion and cook for 2-3 minutes or until softened.
  3. Add the carrot and potato and cook for another 2-3 minutes.
  4. Add the chicken broth, salt, and black pepper and bring to a boil.
  5. Reduce the heat to low and simmer for 10-15 minutes or until the vegetables are tender.
  6. Add the tofu and simmer for another 5-10 minutes or until the tofu is heated through.
  7. Serve hot, garnished with cilantro.

Tofu is a healthy food option. This can be adapted to be vegetarian-friendly by swopping out the chicken broth with mushroom soup.
